Onion,     (Allium cepa)
A culinary staple, onions add essential flavor and vital nutrition to our diet. They are rich in vitamin C, potassium, iron and dietary fiber. Along with other alliums like garlic, onions contain organosulphur compounds that have been linked to cancer prevention and lowing blood pressure and cholesterol levels. Of the common bulb types, there are summer varieties which need to be eaten within a month of harvesting and winter-keeping varieties that can store until the following summer.

Propagation:
Sow in January/February and plant out in April/May, or plant directly in early spring when soil is warming. We recommend the transplant method. Seeds are sown in flats nearly touching each other, ¼" deep in rows. When 4" high, harden off before transplanting. Plant 4" apart in rows 6-10" apart.
Soil & Water: Onions grow best in moist, fertile soils. They prefer sandy/loam soil but will grow in clay and muck soils as well. During growth, water deeply at least once a week as onions need 1" of water a week to develop large bulbs.
Harvesting: Ready for harvest when green tops begin to wither. Cure in partial shade until tops are fully dry.

For the Fishweb Garden I started these onions from seed indoors on March first and the first shoots were up 10 days later. I put three seeds in each small container filled with potting soil. After transplanting the seedlings to the garden I also planted seeds to have a later harvest time for half the oinions.
